not for tofu pros

is it just me or does that photo make you want to eat all of that delicious food?  like, now?  OMG that mushroom, that bagel, those BEANS!?!?!?  it’s torturous to have such beautiful food pics. 

this gorgeous bagel ensemble began as a spinach and mushroom omelette from Vegan Brunch.  all of those talented brunch bloggers make tofu omelets look like breeze.  i salute you, my friends, and admit that i do not share your tofu grace.  my problem is likely my lacking a nonstick skillet… well, maybe. on second thought, it could be a myriad of things that comprise my problems, haha.

no worries, you see, as pictured above.  i scraped the tofu non-omelet from my pan and smooshed it up into a pile that somewhat resembled scrambled eggs at the end of the day.  vegman braved a taste test, to which we were happily surprised – not a total disaster at all since i had everything bagels on hand.  i lathered one side of the toasted bagel with our tofu non-omelet and piled up our omelet fillers (sliced mushrooms and fresh spinach sauteed for a few minutes in olive oil, with fresh garlic, salt, cracked pepper).  oh man those mushrooms.  crimini.  mmm.

for our side, i whipped up another favorite easy black bean.  i sauteed the red bell pepper and red onion in the bottom of a sauce pan.  then added a can of black beans and some lime juice.  i let it simmer while i prepared our omelet redirect.  topped the beans with chopped cilantro before serving. 

this meal was so yummers.  it’s also one of those where it’s better if you feel pretty comfortable with the people you’re serving b/c it’s impossible to eat this w/o creating a huge mess of yourself.  we decided that next time an open faced bagel would have been a perfect amount of bread and a little bit easier to navigate with a fork and knife.  ahhh, who cares, Sunday Brunch is the perfect excuse to be a bit indulgent.  

and doesn’t the sandwich look so nice just as it is?  i luuuuuuurrrrrve my fancy pics.  so happy.

    your pics ARE fancy!! no one would know that you’re wiping fu scramble of your shirt right now.. heheee 🙂

    man… I’ve been dying to try making bagels… mmmm…

    The bagel sandwich looks beautiful. My husband is the omelet master. Not me. I can destroy even in a non-stick skillet. Doh!
