summer bean affair

holy hell it’s hot in houston.  drawing inspiration from a dish made by a good friend, here’s a summer variation of my favorite, the black bean.

Chillled Black Bean Salad

2 cans organic black beans

2 ears of corn, steamed (canned corn or frozen corn also works)

1 bell pepper, chopped (i used yellow)

1 fresh jalapeno, seeded and finely chopped

1 red or yellow onion, chopped (i used yellow)

2 ripe avocados, cubed

2 limes

sea salt to taste

Drain and rinse black beans.  Throw in bowl with all other ingredients.  Juice the limes on top of ingredients.  Stir together, modify spice levels.  Chill 2-3 hours before serving.

This salad goes with everything.  It could be the base of burritos with grilled vegetables.  This went nicely alongside spicy citrus veggie skewers.  It could be used as filling in quesadillas.  It makes a nice dip with crackers or tortilla chips.

    mm… my sister just did a salad kind of like that.. it was awesome… scarfed so much barely had room for dinner… I swear I could eat that stuff on/with ANYTHING!
