not a total failure

this weekend we had a great experience at the farmer’s market:

1 Large Bag of Prewashed Spinach
1 Head of Romaine Lettuce
1 Bunch of Broccoli
1 Package of Mushrooms
1 Package of Baby Carrots
2 Red Bell Pepper
3/4 lb Green Beans
2 Japanese Eggplant
1 Bunch Parsley
1 Bunch Cilantro
1 Bunch Green Onions
2 Onions – red and yellow
3 Garlics
Ginger Root
10 Limes

total:  $13.00 

1 Extra large container of Strawberries
1 Extra large container of bing cherries
1/2 pint blueberries 

total:  $8.00

me and JJ, totally amazed.

i am cooking again!!!  last week i was craving a mess of a veggie stir fry.  i didn’t want to go to any asian restaurant and have veggies drowning in a high-sugar sauce, i wanted *MY* stir fry.  we went to the grocery store and i cooked it right up.  it was delicious.  cooking made me feel normal again.  it inspired me to pick up my veggie encyclopedia and plan out some meals to cook this week.

sunday night i cooked a vegan lasagna.  i found a recipe for spinach lasagna w/ a substitution idea to use tofu instead of ricotta cheese.  here’s what i did:

LAYER 1 – SAUCE: Mushrooms, Onion, and lots of Garlic, chopped in food processor, sauteed in a little bit of olive oil, and added to one jar of organic tomato sauce

LAYER 2 – SPINACH: Fresh spinach sauteed in a little bit of olive oil for 5 minutes

LAYER 3 – HEY LOOK, NO CHEESE: Soft tofu, pureed in food processor; Added 1/4 cup of soy milk to it for creaminess texture; Added 1/4 cup chopped parsley 

i found these great no cook organic lasagna noodles – what a time saver!  all i had to do was layer up and bake 45 minutes. i served it with fresh green salad w/ veggies and walnuts and viniagrette dressing. mmmmmmmmmm.

i fed tofu to teenagers.  everyone loved it.  very proud veghead here.


the failure i refer to in the title of this post involved me not respecting my limits this weekend, consuming way too much wine and crown royal, a massive hangover, and boatload of shame for my drunken stupidity.  note to self:  crown royal is an unhealthy influence on me.  let’s try to be cognizant of that FOREVER.

    funny you had a cooking moment, as i’ve been having one for the past 2 days, and have thought of you the entire time….mainly because i’ve been trying to figure out what to do with the beets i got in my csa box, and everytime i look at them your blog goes through my head about how much you hate them (smile).

    over the past two days i’ve:
    – made lemon mint vinegar and canned (4) half pints of it
    – made and canned (2) half pint of mint jelly, and seriously doubt that i’ll ever try making jelly again.
    – made spanish white bean sausage soup- it used the kale in my csa box this week (froze it)
    – made a chicken, kale, pea, corn stir fry with italian dressing, topped with fresh tomatoes
    – made beet and pear puree, saved some for tonight, froze the rest
    – handmade pasta, and then attempted to make ravioli (we’ll see how it turns out after i cook it one night) the stuffing: ricotta, spinach, beet tops & garlic scapes
    – made and gave to my neighbors, pinapple mint sherbert. making another batch for us later.

    and i still have veggies left over from my csa box!
